2011-03-17 18:53:37 ET They had a potluck at work today, and I decided to try something I've had in mind for a while. I'm sure someone has already done it, but everyone at work thought it was a good idea (also tasty!)  Mini Taco Bites Recipe: Tostitos Scoops Tortilla chips (or similar bowl shaped chips) Finely chopped lettuce Refried beans Mexican Rice Taco Sauce or Salsa Sour Cream Shredded Cheese Grape Tomato slices Jalapeno slices All I did was place the chips in a cake pan in a single layer, put lettuce in each one. Put the refried beans in a sandwich bag, cut the corner off and piped it on top of the lettuce. Spooned on the rice, taco sauce and sour cream. Sprinkled with cheese and placed a tomato and jalapeno slice on each one. I put some wax paper on top and did another layer. You can fit just over 50 into a 9x13 pan. It took just under an hour to prep and put everything together. I made them vegetarian because I like to do that for potlucks, but you can, of course use meat instead. People exclaimed at how cute they were - they look like they take a lot more work than they actually do. . . |
